Documentary podcaster and coffee expert James Harper travels the world for his productions and talks to leading coffee scientists and industry experts. Filter Stories is one of the coffee industry’s most popular podcasts and educates the specialty community about history, science, and sustainability through documentary audio storytelling. His Filter Stories podcast’s The Science of Coffee is a series dedicated to uncovering the fascinating science behind our cup of coffee.
At the beginning of November, James spent two days at PROBAT in Emmerich for an intensive immersion in the art of roasting. He learnt a lot about time, temperature, air flow volume, convection, conduction, radiation and the fact that two coffees with the same roast color can have dramatically different flavors depending on the roasting path taken.
This episode dives deep into the science of coffee roasting and explores how the chemical composition of green coffee transforms during the roasting process.
This engaging and informative episode will be available on all major platforms—Apple Podcasts, Spotify, and YouTube— and is set to release in Q1 next year.
